Recipe of the month: Sofrito

This is where the different flavors and smells of Cuban food comes from. Nothing like walking into the house as you cooking this sauce.

Ingredients:

  • 2 tablespoons of vegetable oil or olive oil

  • 1 medium onion chopped

  • 1 green bell pepper chopped & seeded

  • 5 cloves of garlic pressed & chopped

  • 1 teaspoon of salt

  • 1 teaspoon of pepper

  • 1/4 teaspoon of ground cumin

  • 1 teaspoon of dried oregano crushed

  • 2 bay leaves—medium

  • 3/4 cup of canned tomato sauce

Heat oil in a skillet over medium-high heat. Add onion, garlic, and cook until onion is translucent. Add the bell pepper, and sauté until tender. Add salt, pepper, cumin, oregano and bay leaves. Continue cooking until the mixture looks like a yummy paste. Gradually stir in the tomato sauce simmer until the sauce looks really red. Taste, and adjust seasonings if desired. Remove bay leaves before using. Refrigerate for multiple use or freeze so you can use it up to a month later. Yummy!
